Mondrón’s Bio ‘Único’ comes from the Verdial variety from Vélez (Málaga) and the Hojiblanca variety. It has all the characteristics of an ecological extra virgin olive oil: intensity and complexity. Only three thousand liters of this oil are produced from olives harvested in the firstweek of November.
Its intense aroma is a mixture of green olives, tropical fruits and wild herbs.
Its light and smooth taste is transformed into an exquisite spiciness and bitterness.

How to use

In addition to all the uses that can be given to a quality extra virgin olive oil, such as creatingsalad dressings or simply on toast, this oil is recommended for making sauces and mayonnaisesin dishes such as ‘gazpachuelo’, a typical soup from Málaga, since it is a light oil that will notstand out over the rest of the flavors but will complement them.
